Okay, I am not an authentic mochi connoisseur, I just know what works for me. I dislike mochi with ice-cream filling, I prefer it with just a type of cream. This one works for me - it’s a large soft mochi, filled with soft matcha cream; a perfect blend of sweetness with hints of green tea bitterness.

Sicilian cannoli & ice cream - Niva (Cannes, France)
Confession time: I once had a mild addiction to Sicilian cannoli - that only ended once I had way too many on a visit to Sicily. One of my unmissable spots to visit when in Cannes is my friend Daniel’s excellent ice cream store “Niva”. Firstly, I appreciate real entrepreneurs that love what they do - and Daniel is one of those. He cares deeply about improving the customer experience from the aesthetic of the shop, to the ingredients he uses in the food. Everything is very very high quality. For cannoli, they import the finest ricotta from Sicilian goats - which you can immediately taste in the freshness of the cannoli’s ricotta filling. Usually, I am not a huge fan of ice cream, but I regularly have Cremino & Pistachio ice creams (and occasionally other flavours) at Niva.
Sicilian Cannoli - Segreti del Chiostro (Palermo, Italy)
According to locals, some of the best cannoli in Palermo. It’s a convent where the nuns make a bunch of traditional cookies and pastries. The cannoli are really large, and most importantly, have amazing and fresh ricotta.
